5-Spice Chicken

Ingredients

1/4 cup sesame seed, toasted
2 whole medium chicken breasts (1 1/2 lbs. total), halved lengthwise
2 tablespoons soy sauce
1 teaspoon Homemade Five-Spice Powder

Procedure

Toast sesame seeds in a 375 degree oven for 8-10 minutes, stirring once or twice.
Rinse chicken, the pat dry. In a small mixing bowl combine soy sauce, and five-spice powder.
Brush chicken with soy mixture.
Coat skin side with sesame seed.
Place chicken, skin side up, on a foil lined ungreased 13x9x2 inch baking dish.
Bake in a 375 degree oven for 45 to 55 minutes or til tender (juice runs clear, not pink).

Note: Five-Spice Powder can be purchased at Asian grocery stores, health food stores, or in the specialty section of your local grocery store.
But, homemade Five-Spice Powder is much better and easy to make, too. Use your mortar and pestle or an electric coffee grinder to mix the ingredients.

Homemade Five-Spice Powder:
In a small mixing bowl combine:
1 teaspoon ground cinnamon
1 teaspoon crushed anise seed or 1 star anise, ground
1/4 teaspoon crushed fennel seed
1/4 teaspoon freshly ground pepper (or 1/4 teaspoon Szechuan pepper)
1/8 teaspoon ground cloves.
Store in a covered container. Makes about 3 teaspoons.

Tuxedo Mushrooms

Ingredients

2 lbs. whole mushrooms
1 large onion, diced
6 cloves garlic, minced
1 can low sodium beef broth
2 tbs. Dijon mustard
1 tsp. Worcestershire sauce
1/2 tsp. Tabasco sauce
3 tbs. olive oil
2 tbs. chopped parsley
1/4 cup dry red wine (optional)

Procedure

saute onion and garlic in the olive oil in a large skillet or chef's pan until onion is just translucent
add remaining ingredients (except mushrooms), and bring to a boil
add mushrooms, and toss lightly
simmer for approximately 1 1/2 hours.

An easy side dish, with restaurant flair!
